Meatless Steamed Egg

You’ll need

Eggs – 4pieces
Water – 1/2 Cup
Evaporated Milk – 1/2 cup
Salt – 2 teaspoon
Red bell pepper – small dice1 piece
Leeks – small dice 1 stalk
Black olives – 4 pieces
Pureed Squash – 1/2 cup

How to Cook it

1. In a bowl whisk eggs, water, Milk, and salt together until fully combined. Set aside
2. In another bowl mix together onions leeks and bell pepper. Set aside
3. Prepare 5 ramekins by dividing the onion leeks and bell pepper and laying at the bottom of the 5 ramekins
4. Pour in the Egg mixture, filling up to 3/4 full
5. Steam the ramekins in steamer for 10 minutes over medium-high heat.
6. Let it cool a bit before unmolding and preparing for plating.
7. Serve hot with pureed squash and garnish with black olives.

Squash Preparation

Chili-Garlic oil 1teaspon
1. Boil squash until fork tender
2. Mash
3. Add 1/4 cup cream and 1 Tablespoon unsalted butter
4. Mix until well incorporated.
5. Set aside
