Fern Salad with Salted Egg


about 2 bunches of fern (get only the tips or the young shoot)
3 salted eggs
1 red onion, sliced
5 pieces of red tomatoes
2 tablespoons of vinegar (use apple cider vinegar or balsamic vinegar if you have)
5 tablespoons of olive oil
salt, pepper and a pinch of sugar


1. Wash and clean the fern tendrils.
2. In a casserole, put a lot of water with some salt and let it boil.
3. Add the fern for blanching (remove after 7 to 8 seconds) and put immediately in a bowl of water with some ice on it.
4. Drain and pat dry.
5. In a salad bowl, put the fern leaves, sliced tomatoes, onions and sliced salted egg.
6. Toss the salad together with your dressing. Serve chilled.
