Cheesy Potato Egg balls over savory vegetables

You’ll need

Saucepan, Turner
Mixing bowl, Serving plate
frying pan

Egg balls preparation

Egg – 2pieces
Potatoes, boiled and mashed 3pieces
Garlic – 2cloves
Butter -1 tablespoon
Cheese -1cup
Salt -1/2teaspoon
Pepper -1/4teaspoon

1.Boil eggs for 5minues (medium soft boiled eggs). Shell and set aside.
2. Add garlic and butter to the mashed potatoes.
3. Combine cheese with the mashed potato.
4. Season with salt and pepper.
5. Get a handful of mashed potato, flatten into your hand and take one egg. cover the egg with mashed potato, set aside.


Savory vegetables preparation

Bacon chopped 2 strips
Onions, chopped 1piece, medium
Garlic, finely chopped 1 clove tomato, diced 3pices
Carrots, cubed 1 piece
Corn kernel 1/2cup
Bell pepper, cubed 1piece
Tomato sauce 1cup
Cheese, granted 1/4cup
Cilantro, chopped sprigs
Salt 1/2 teaspoon
Sugar 1 1/2teaspoon
Pepper 1teaspoon
Chili Powder 1/4teaspoon

1. In a medium size pan, fry bacon add the onions, garlic and tomatoes and cook for 3 minutes
2. Add the carrots and cook for another 2minutes. Then add the corn kernel and the bell pepper, Stir and let it cook for another minute.
3. Add the tomato sauce, Once it starts to boil add the cheese and cilantro.
4. Season with salt, sugar pepper and chili powder.
5. Serve it hot on a plate and put the cheesy potato egg balls over it.
